Winter's Apple, Cinnamon, and Lemon Muffins

Winter’s Muffin alle mele, cannella e limone

Ingredients

  • 2 apples
  • 150 g of 00 flour
  • 2 eggs
  • 120 g of Muscovado sugar 
  • 90 ml of milk
  • Seed oil to taste
  • Cinnamon powder to taste
  • Baking powder to taste
  • 1 pinch of salt to taste
  • 1 untreated lemon
  • 2 scoops of Vegan Protein Lemon and Moringa (about 30g)

Procedure

Peel the apples, cut them into small pieces and place them in a bowl with the lemon juice.

In a bowl, beat the eggs with the sugar, then add the milk and oil.

Also add the flour, the yeast, the Vegan Protein Lemon and Moringa , the grated zest and beat the mixture using a whisk.

Using a sieve, drain the apples from the lemon and pour half of the contents into the batter (the other half will be used at the end). Now add the cinnamon and a pinch of salt and mix the mixture.

Line the cavities of a muffin tin with paper liners and pour in the mixture until the molds are half full, finally adding the apples that were previously set aside.

Bake the muffins in a preheated oven (static mode) at 180°C for about 30 minutes.
